Beans and Rice, Baby

Ok, I really do take pictures of my other two children, I promise!! I just had to note Juliet's coronation into the world of beans and rice. We eat a lot of beans and rice around here (and if you don't know why, then you really need to Google "Dave Ramsey") and it's a momentous event when a family member joins us in this corner of our culinary world. I was reading the current issue of "American Baby" while pumping the milk you see in her sippy cup above and discovered that she should be having finger food by now. Ooops! In my effort to keep her a baby forever, I've only been giving her pureed foods. My bad. She loved feeding herself!

do you have "beans and rice" recipes, or do you just cook beans and serve them with rice? I know we are such bad Dave followers when it comes to the grocery budget... we should be eating way more beans and rice but I just can't get over the boredom! help!

Brianne - We do beans and rice about once a week. I just put brown rice in the rice cooker and then saute canned organic black beans with onion, garlic and olive oil and put them with cheese wrapped up in a tortilla. I'm terrible lately about budgeting for food (there's a budget, but I'm always over), but if you look at Bethany W's blog, she posts her meal plan for 2 weeks and they are always economical.
