
Onto my meal plan for the next week and a half or so.
Quinoa stir fry with chicken and frozen veggies
Tuna casserole (double) (sub frozen beans instead of peas)
Tacos (including refried beans, corn chips, sour cream, salsa, ground meat)
Tortilla chip pie
Calzones
Leftover minestrone (from the freezer)
Hawaiian chicken thighs/brown rice/veggies
Kefir shakes
Breakfast bars
Banana Muffins
Pumpkin bread
I have to say how amazing those banana muffins are - they are made with whole wheat pastry flour and maple syrup - the texture is airy and they are perfectly sweet. I made them this morning and we are trying to figure out how we are down 8 already...
